Easy Japanese Curry with Golden Curry (일본식 카레)

Japanese curry is also a familiar everyday dish in Korea. I usually use S&B Golden Curry with onion and a little carrot. Blending the cooked vegetables gives the sauce a smooth texture that goes wonderfully with rice. It is a simple meal for everyday cooking, with fried shrimp or sausage on the side if you like.
My simple Japanese-style curry uses S&B Golden Curry roux, onion and a little carrot. Half a 220 g pack of curry roux, about 700 ml water, a spoonful of sugar and a spoonful of Worcestershire sauce make enough curry sauce for 3–4 servings. It takes about 20–30 minutes, excluding rice and optional toppings.
For a smooth sauce, blend the cooked vegetables with an immersion blender before adding the curry roux. You can also leave the vegetables unblended. Serve with rice and, if you like, fried shrimp or sausage. These accompaniments are prepared separately.
The spoon measures here refer to an ordinary Korean rice spoon, an eating spoon rather than a calibrated measuring spoon. Choose the heat level of the Golden Curry roux to suit your taste.
How I cook it
Peel about half an onion and one third of a carrot. Cut both into small pieces.
Heat about one eating-spoonful of cooking oil in a pot. Add the onion and sauté, stirring, until softened.
Add the carrot and sauté it together with the onion.

Pour in about 700 ml water and bring to a boil. Simmer for about 10 minutes, until the vegetables are soft enough to blend.
Optional, for a smooth sauce: turn off the heat and blend the vegetables in the cooking liquid with an immersion blender. Keep the blender head submerged to avoid splashes. If you prefer vegetable pieces, skip this step.
Stir in one eating-spoonful of sugar and one eating-spoonful of Worcestershire sauce.
With the heat off, add 110 g of S&B Golden Curry roux, half a 220 g pack. Stir carefully until the roux has completely dissolved and no lumps remain.
Return to low heat and gently simmer, stirring, until the sauce is smooth and thickened. Serve with rice. Fried shrimp or sausage can be added as optional accompaniments, prepared separately.
