In Korea, potatoes are often served as a side dish or enjoyed as a simple snack. These Korean-style boiled potatoes are soft and fluffy, with a lightly sweet and salty flavor.

Potatoes about the size of a fist work especially well because they cook evenly. If you are using larger baking potatoes, cut them in half before boiling.

This is a simple home-style recipe that requires only a regular pot and a few basic ingredients. Serve the potatoes warm as a snack or alongside other Korean dishes.

How I cook it

  1. Add 400ml of water to a pot. Stir in the sugar and salt to dissolve slightly—it doesn’t need to be fully dissolved.

  2. Place the potatoes in a single layer in the pot. Aim for 8–10 potatoes depending on size.

  3. 20:00

    Bring the water to a boil, then cover the pot and reduce the heat to medium-high. Boil for about 20 minutes, turning the potatoes occasionally.

  4. After 20 minutes, test the potatoes by inserting a chopstick or fork. If it slides in easily, the potatoes are done.

  5. At this point, uncover the pot and let the remaining moisture evaporate while cooking. When only a little water remains, reduce the heat to low, cover the pot, and shake it gently.

  6. For a fluffier texture, leave the potatoes on low heat for a bit longer until they develop a lightly roasted appearance.
