Korean Street Toast (길거리 토스트)

Korean street toast, also called gilgeori toast(길거리 토스트), is a nostalgic snack commonly sold at street stalls and toast shops in Korea. It is quick, filling, and made with an unusual but delicious balance of savory and sweet flavors.
The classic version combines buttery toasted bread with a cabbage-and-egg patty, sugar, ketchup, and mayonnaise. Ham, cheese, pickles, or other fillings can also be added.
Use enough butter to brown the bread and give it a rich flavor, but avoid adding too much cabbage or filling, as the sandwich can become difficult to hold together.
How I cook it
Prep the Vegetables: Thinly slice the cabbage and green onion. Grate or finely chop the carrot if using. These add crunch and flavor to your toast.
Mix the Egg Mixture: Beat 2 eggs in a bowl. Add 2 tsp sugar and mix well. Stir in the prepared vegetables until evenly distributed.
Toast the Bread: Heat a pan and melt the butter. Lightly toast both sides of the bread slices until golden and crispy. Set aside.
Cook the Egg Mixture: In the same pan, pour the egg mixture and spread it out evenly to match the size of the bread. Cook until set, then flip and cook the other side.
Assemble the Toast: Place the cooked egg on one slice of toasted bread. Spread ketchup and mayonnaise over the egg. Top with the other slice of bread.
Optional Additions: Ham, bacon, or cheese can be added for extra flavor.
