Jicoba Chicken, sometimes searched for as Zicoba Chicken or Jigoba Chicken, is a Korean spicy chicken dish coated in a sweet, garlicky sauce. The Korean brand name is 지코바, and the spelling can vary when written in English.

Jicoba Chicken is inspired by a popular Korean chicken dish coated in a spicy, slightly sweet, and garlicky sauce. The sauce is bold and especially good served with a bowl of rice.

You can use chicken pieces, wings, or boneless chicken thighs. Small boneless pieces are the easiest option for everyday cooking. Korean rice cakes can also be added if you have them.

The original dish often has a noticeable grilled flavor, but this home version also works well with a frying pan, air fryer, or deep fryer.

How I cook it

  1. Cook the chicken pieces or wings in a frying pan, air fryer, or deep fryer until fully cooked. Set them aside briefly.

  2. Combine the jin ganjang, oyster sauce, chicken stock powder, sugar, corn syrup, gochugaru, garlic, ketchup, and black pepper in a bowl.

  3. Place the cooked chicken in a frying pan and pour over the sauce. Stir gently over medium heat until the sauce thickens and coats the chicken evenly. Add the tteok during this step, if using.

  4. For extra heat, add sliced green chili or jalapeño at the end. Serve immediately with warm rice.
