This Korean pork ribs recipe is inspired by a popular recipe from Korean actor and home cook Ryu Sooyoung. It uses a sweet and savory marinade that gives the pork a rich flavor while keeping the preparation practical for home cooking.

Korean pear is traditionally used to add sweetness and help tenderize the meat. Fresh pear works well, but pear juice is also a practical substitute.

If tuna fish sauce is unavailable, use Japanese tsuyu. You can also substitute a small amount of dark soy sauce and broth powder.

The ribs need time to absorb the marinade. Prepare them about four hours before cooking, or marinate them earlier in the day for dinner.

How I cook it

  1. Slice the leek into thin rings. Grate the pear and collect its juice. Mix the pear juice with the other seasoning ingredients (except for the pork) in a large bowl.

  2. Cut the pork into 1–1.5 cm thick slices. Score each slice diagonally on one side and straight on the other to help the marinade soak in.

    Add the pork to the marinade, mix well, and refrigerate for about 4 hours.

  4. Heat a pan with some oil and fry the pork slices over medium-high heat. It tastes even better grilled! While frying, use scissors to cut the meat into bite-sized pieces.

  5. Serve and enjoy! This dish is perfect for BBQ parties or family dinners.
