Chogochujang (Korean Spicy Vinegar Sauce, 초고추장)

Sauces & basics🕒 5 mins🍽️ 3 servings

My notes for this recipe

Korean cooking includes many sauces designed for dipping, mixing, and seasoning. One of the most popular is chogochujang, a sweet, sour, and spicy sauce made with gochujang and vinegar.

Chogochujang pairs especially well with blanched vegetables, dashima or kombu seaweed, boiled squid, seafood, and different types of jeon. It can also be used as a dressing for salads or mixed into rice dishes.

The balance between sweetness, acidity, and heat can be adjusted easily. Add a little more vinegar for a sharper sauce or more sugar or syrup for a sweeter flavor.

Instructions

You can actually buy chogochujang pre-made, but if you have the ingredients, it’s very easy to make at home. Simply mix all the ingredients together, and that’s it!

Feel free to make a larger batch (double or triple the recipe) and store it for later use. It’s convenient to have ready whenever you need it.
